Wow, it has been a week. I am finally feeling better from that cold I had. It was a doozy not only did it affect me physically but also emotionally. Finally on Tuesday morning I felt more like myself. I took the week to catch up on the things that I let sit on the back-burner. Boy, am I glad that is over.
Yesterday was the first day of Winter and boy did the winter weather hit us. It was snowy, windy and cold! One of my biggest fears is driving in the snow. I despise it. But, I am happy to say that I ventured out not just once but twice! I had to go back out to get hubbies medicine. The roads were covered! I almost turned around and came back home. But I took a deep breath and faced my fear. Luckily, while I was waiting VDOT came through and cleared the main road so I just had a minor anxiety attack on the road that leads to my house. For some reason they miss that road. So, it wasn’t the end of the world for everyone or myself. I made it home safely!
Now that I am home and the world didn’t end I decided since that I will have a long 4 day weekend that I would try something different to help the hubby heal. Without discussing it with him I am going to take the next 3 days to be meat and wheat free. We will see how it goes.
Day #1 Our food diary: he had a late start
cranberry, apple juice
carrots, celery, apple, lemon, and ginger juice (I left out the garlic)
banana oat pancakes with blueberry topping
~I didn’t have the oat flour so I made my own by blending oatmeal to make the flour, I also substituted the egg by using an egg replacement. I think next time I will use the flax egg. I had a hard time flipping them. The blueberry topping is a yummy addition. I pour about 1/2 cup of frozen blueberries in a pot with about 2 Tbsp of maple syrup and let it simmer.
One thing is for sure we got our fruit in. We need to work on the veggies. Tomorrow is another day. I wish everyone a fantastic weekend.
